This chocolate potato cake is one of the lightest gluten free cakes we’ve tried. It has a fluffy, crumbly texture and a mild chocolate flavour. You’d never guess that the recipe uses mashed potatoes!This is a conversion of a recipe that I came across in our local paper. (I also halved the recipe which explains some of the odd measurements.) The caption in the paper says that the potatoes boost nutrition, but I’m not so sure about that!

dark chocolate quinoa brownies with nutella cream cheese icing – these are not your six-year-old’s brownies
With a texture that’s beyond fudgy, these brownies have just a hint of sweetness and a whole lot of dark chocolate goodness. Just to be extra decadent, we coat them with a not-too-sweet cream cheese and Nutella icing. Kit Kat Kopy Kat
I know, I know. These look more like a Peanut Butter Cup than a Kit Kat Bar but without a proper chocolate mold this was what we came up with! These gluten free Kit Kat “Bars” taste like the real thing and are not that difficult to make. No oven required – just a blender and a microwave. Been missing Ferrero Rocher since you went gluten free? Well Geoff has. It used to be one of his holiday favorites, so this year we decided to try to make some that were gluten free.
