The flavours of orange and chocolate come together in these sink-your-teeth-into-‘em chewy, crumbly cookies. Made using a base of rolled oats, they are also relatively low calorie coming in at about 50 calories per cookie. They do, however, tend to crumble very easily, but we just put the crumbly bits in a bowl and serve it up as one awesome gluten free granola!My mom, Mary, made these for Geoff at Christmas and kindly gave us the recipe. What you’ll need:
2 Tablespoons unsalted butter, softened
¼ cup + 3 Tablespoons sugar
1 large egg
1 teaspoon vanilla
1 Tablespoon orange zest
1 ¼ cup gluten free rolled oats (We like Only Oats)
1 teaspoon baking powder
1/8 teaspoon salt
½ cup semi-sweet chocolate chips
What you’ll do:
Heat the oven to 350 degrees and line your cookie sheets with parchment paper.
In mixer, beat the butter and sugar until fluffy. Add the egg, vanilla, and zest and beat until fluffy – again.
In medium bowl, mix together the oats, baking powder and salt. Add to egg mixture and stir until combined.
Add the chocolate chips and stir until combined.
Scoop the dough 1 tablespoon at a time onto your cookie sheet, spacing scoops about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
Bake 8 to 10 minutes until the edges are slightly browned.
TIP: Because these cookies crumble so easily, it’s best to let them cool before removing them from the cookie sheets.
